Watercress is a peppery leafy green and a good source of vitamins A, C and K; Vitamin C contributes to the normal function of the immune system. It also contains glucosinolates studied in laboratory research for their antioxidant activity. Use watercress raw in salads and sandwiches, stir it into soups at the last moment, or blend it into sauces and pestos.
