Spinach is a tender leafy green rich in vitamins A, C and K, iron and folate; Iron contributes to normal oxygen transport in the body, and Folate has a role in the process of cell division. It also contains carotenoids such as lutein studied in laboratory research for their antioxidant activity. Eat young spinach raw in salads, or wilt mature leaves into soups, curries, pastas and eggs.
