Galangal is an aromatic rhizome related to ginger, with a sharp, citrusy, peppery flavour central to Thai and Indonesian cooking. It contains aromatic compounds that have been studied in laboratory research for their antioxidant activity. Slice or pound fresh galangal into curry pastes, soups such as tom kha, and braises.
