Elderberry
Elderberries are small, dark berries that are very high in anthocyanins, which make up much of their polyphenol content and give them their deep colour. These plant pigments have been studied in laboratory research for their antioxidant activity. Raw elderberries should not be eaten; they are cooked into syrups, cordials, jams and sauces.
