Edamame are young, green soybeans harvested before they harden, with a fresh, mildly sweet, nutty taste. They provide complete plant protein along with fibre and the plant compounds known as isoflavones. Boil or steam the pods, sprinkle them with salt, and pop the beans straight from the shell, or shell them into salads, stir-fries, and grain bowls.
