Chayote (Sechium edule) is a mild, crisp green squash eaten across Mexico, Central America and the Andes in soups, stews and salads. Very low in calories and carbohydrate, it provides vitamin C and the flavonoids quercetin and kaempferol, making it an easy diabetic-friendly vegetable.
