Belgian endive
Belgian endive is a small, pale, tightly packed chicory with a crisp texture and pleasantly bitter flavour. It provides fibre, including inulin, which helps feed beneficial gut bacteria. Use the leaves raw as scoops or in salads, or braise or roast whole heads until tender and caramelised.
